I suppose for security, the best thing would be to acquire older hardware still running the OS, and either remove internet functionality for offline use (say older pc games, watching films from discs, etc.) or possibly dual-boot with a Linux distribution for any use online.
Personally, I have a soft spot for Windows XP.

It's still possible to be used.
We don't use it anymore because it's outdated, somewhat dangerous, and a lot of programs are incompatible in 2024. There is nothing stopping you from using them though if you really want to.
