depends what kinda anime you like. death note is good all around, its a lot of peoples first anime. even non-anime fans can probably enjoy it.
evangelion is... trippy. and doesnt really make much sense unless you watch it atleast 20 times, but its one of my all time favourites.
madoka is the perfect balance of normal-to-mindfuck. it lures you into thinking its a normal magical girl anime, but then sucker-punches you with some very weird and dark stuff. dont look up spoilers tho, it has to be enjoyed organically.
also dont bother with the evangelion movies they suuuuuuuck, stick to the series
