If you ever need vanilla extract for a recipe, but live somewhere where it's hard to find (ex. Germany), vanilla sugar, maple syrup or vanilla aroma are suitable substitutes. Almond extract can also work in recipes where it makes sense (ex. nut based recipes).
note: while good substitutes, the end result of what you are baking may not taste the same as it would with vanilla extract. If you really want to use vanilla extract, you may be able to find it in large cities.
