Chu Wanning 


Chu Wanning’s | Osmanthus milk tea

Ingredients
2 cups water
4 tablespoons black tea leaves
1 (14-ounce) can sweetened condensed milk, or to preferred taste
Osmanthus syrup to taste

Steps to Make It
Gather the ingredients.
Combine the water and tea leaves in a small saucepan over medium heat.
Bring to a low boil. Reduce the heat and simmer for 3 minutes.
Remove from the heat. Stir in the sweetened condensed milk and Osmanthus syrup to taste. Return to the heat.
Bring back to a boil. Simmer for 3 more minutes
Strain the tea and condensed milk mixture.
Serve hot or chill and serve over ice. Small glasses are ideal.

How to make simple osmanthus syrup
1. Sterilize a jar by boiling it in a water for 10 minutes and then let it air dry on a clean towel
2. Put water, sugar, honey (if using), and salt in a saucepan over medium heat. Cook until the sugar dissolves. Bring it to a boil and then turn off the heat
3. The mixture should be clear and no longer cloudy. Turn off the heat
4. Transfer the syrup to the jar and add osmanthus flower
5. Stir it a bit to combine with the syrup
6. Let it cool down and then close the lid and let it sit in the fridge for 2-3 days or longer. The longer it sits, the more intense the flavor will be
7. The syrup can be kept in the fridge for about 2 weeks


Mo Ran

Mo Ran’s | Puppy dog treats

Easy chicken dog treats or wontons to spoil the special dog (Mo Ran) in your life.

INGREDIENTS
Silicone of some sort Mold (either oven or freezer good)
1 cup cooked, finely diced chicken
1/2 cup rice, cooked & mashed
3 tablespoons rice flour
1 tablespoon parsley
1 egg
Puppy (Mo Ran) safe wonton wrappers! (Optional)

INSTRUCTIONS
Preheat oven to 350F
Mix together all ingredients and stir well.
Spoon into silicone molds.
Bake for 20 - 30 minutes, until tops are golden brown.
Allow to cool and remove from molds.
Alternatively, freeze the treats instead of baking, and use a puppy (Mo Ran) safe wonton wrapper ( or you can make one!! ) to make your very own wonton for your pup ( Ehm Mo Ran )
Drop them in a pot of boiling water for a little bit, ( until they’re no longer frozen, and thoroughly cooked ) and boom! You have puppy safe (Mo Ran safe) wontons!

NOTES
Store in the fridge for up to 5 days or in the freezer for up to 3 months

Mo Ran’s | Spicy hot pot

Spicy hot pot broth

 

Beef tallow (aka beef dripping). This key ingredient serves two purposes. It makes the broth rich and aromatic and it solidifies at room temperature so it combines all the other ingredients into a block for easy storage.

Dried chili pepper & Sichuan pepper. Together they create the Mala flavor.

Other spices, such as star anise, cassia cinnamon, bay leaves, tsao-ko (Chinese black cardamom), etc. They lend aroma to the oil, just like how they function in making Chinese chili oil.
Aromatics, such as scallions, onion, coriander , garlic and ginger.
Sichuan chilli bean paste & fermented black beans.
Shaoxing rice wine & sugar for balancing the flavor.
Cooking steps

Rehydrate dried chilies in hot water until soft. Then chop them into a coarse paste (use a blender/spice grinder or with a cleaver/knife).

Add Shaoxing rice wine to Sichuan pepper and set aside.

Melt beef tallow in cooking oil over medium heat while infusing it with star anise, cassia cinnamon, bay leaves and tsao-ko.

Then remove the spices and add scallions, sliced onion and coriander to fry.

After removing the aromatics from the oil, add the dried chili paste prepared earlier, Sichuan chili bean paste, fermented black beans, minced garlic and ginger. Simmer to fully release their flavor.

Finally add sugar, sichuan pepper, along with rice wine.

Transfer everything to a heat proof container and refrigerate once cooled.

Allow 24 hours before using.


Xue Meng

Peacock Fruit Salad

All things included peacocks ( Xue Meng’s ) can eat!!
Make sure to give them some every little while to have a happy and healthy little peacock. ( Xue Meng )

Ingredients
Blackberries ( 1 cup )
Raspberries ( 1 cup )
Blueberries ( 1 cup )
Sunflower seeds ( with no shell ) ( 3 cups )
Apples ( 4 cut up or diced )
Mangos ( 2 cut up and or diced )
Strawberries ( 2 cups sliced )
Cantaloupes ( 3 cups sliced )
Pears ( 2 cut up or diced )
Pineapple ( 2 cups cut up or diced )

Steps

Dice and or cut up your Apples, Mangos, Strawberries, cantaloupes, pears, and pineapple.

Make sure to put any excess juice in a cup for later.

Combine all of your fruit in a large bowl add in your sunflower seeds.

Use the juice leftover from earlier and or some sort of nice fruity ( just as fruity as Xue Meng— ) dressing.
