I made some pâté today and it turned out really well, so I thought I'd post it in an abbreviated form for anyone interested. it does require a food processor or a blender, since you'll need to blend things into a paste.
Ingredients:
- 1 Large Onion
- 1lb Liver (I used rabbit, chicken or beef is fine)
- 1tsp Garlic
- lemon juice
- 1 cup or two sticks of butter
- 2tsp sour cream or heavy cream (optional)
- Salt and pepper
Quarter the onion and use the food processor to dice it. Add to pan with a knob of butter, saute until well done and nearly caramelized. Add liver to pan, cook until nearly done. (about 8 minutes) Add garlic and finish cooking everything in the pan, adding butter as needed. Cook until you have caramelized onions, liver cooked through, and garlic roasted and flavorful before moving to the next step.
Add cooked ingredients to food processor or blender and pulse. Add remaining butter in small chunks along with lemon juice and slat/pepper to taste. Optionally add two tsp of cream or sour cream at the end. Process until pureed into smooth paste.
Add to bowl and cover with cling wrap, pressing out all air. Serve after completely cooled on toast, sourdough, or any crusty bread.

Never tried pâté before.
You can buy it in cans at the grocery store, it's a spread you put in good bread or crackers. You should try it!
