Questioning acoustic guitars standard factory setup, etc. Easier to play equals more likely to sell.

So I've been playing guitar for about 26 years and in my experience many acoustic guitars come off of the rack with high action and cable thick strings. I see no logical explanation why this has to be. As long as the frets are leveled and the neck isn't bowed they should be able to accommodate low action with no problem and 10-47 gauge strings. I would tend to think it would make it a lot easier for beginners to play and less discouraging with attempting to fret notes and play chords. Over the years I've learned to do my own setups and the ease of playability on my guitars has improved drastically just by filing down the saddle and perhaps a fret leveling here and there. I had carpal tunnel in my hands so low action is essential for me. Although after some weight training my strength has improved somewhat. Anyway, just another constructive criticism. I always find myself going into guitar shops and finding poor setups. I'm willing to bet these places would sell more guitars if their tech would set them up properly. Yet here I am...something that I'm completely capable of doing but they won't hire me. Their loss I suppose.
