Recipe: Lemon Butter

  • Ingredients:
    8 eggs, beaten
    1.5 cup sugar
    1 Tbs grated lemon rind (optional)
    1 cup lemon juice
    250 g butter, chopped and warm

  • Combine sugar and eggs in a heatproof bowl.
  • Whisk constantly over simmering water until sugar dissolves.
  • Add lemon juice and continue to whisk until smooth.
  • Add slightly melted and chopped butter.
  • Continue whisking until smooth and starting to thicken.
  • Place into clean dry bottles and seal
  • Store in the refrigerator until required.
