8 eggs, beaten
1.5 cup sugar
1 Tbs grated lemon rind (optional)
1 cup lemon juice
250 g butter, chopped and warm
- Combine sugar and eggs in a heatproof bowl.
- Whisk constantly over simmering water until sugar dissolves.
- Add lemon juice and continue to whisk until smooth.
- Add slightly melted and chopped butter.
- Continue whisking until smooth and starting to thicken.
- Place into clean dry bottles and seal
- Store in the refrigerator until required.
