I just want to clarify that I haven't tried this recipe myself yet and I got it by an Instagram food creator that makes plant based recipes. Her user is @stef.veganfit :)
Ingredients:
Crust:
-8 rice cakes
-120g raisins
-2 tbsp soy milk
Cheese Layer:
-400g soy Greek yogurt
-200g cashews, soaked
-30 g vanilla protein powder
-40g cornstarch
-½ tsp agar powder
-60g lemon juice
-Zest of 1 lemon
-60g sweetener(stevia)
-1 tsp vanilla extract
Lemon Curd Layer:
-60g lemon juice
-½ tsp turmeric (for color)
-200g soy Greek yogurt
-50g sweetener of choice
-1/8 tsp agar powder
Instructions:
1. Blend all the ingredients.Press into a lined pan.
2. Blend everything and pour the mixture into a saucepan,heat on low, stirring constantly, until slightly thickened.
4. Pour the cheese layer over the crust and refrigerate until firm, at least 4 hours.
5. Whisk together everything and cook for 1-2 minutes until slightly thickened.
6. Let the curd cool slightly, then pour it over the set cheesecake. Refrigerate for another hour.
